Single-Serve Molässa Banana Bread

Ingredients

  • 1 overripe banana, mashed

  • 2 tbsp melted butter

  • 1 egg yolk

  • 1 tbsp Molässa

  • 1 tsp brown sugar

  • ½ tsp vanilla extract

  • ½ cup all-purpose flour

  • ½ tsp baking soda

  • ¼ tsp cinnamon

  • Pinch of salt

Preparation

  1. Preheat the oven to 350°F. Grease a mini loaf pan, a large ramekin, or a couple of muffin cups.

  2. In a bowl, stir together the wet ingredients: mashed banana, melted butter, egg yolk, molasses, brown sugar, and vanilla until well combined.

  3. In a separate bowl, whisk together the dry ingredients: flour, baking soda, cinnamon, and salt.

  4. Add the dry mixture to the wet and fold gently until just combined. Don't overmix.

  5. Pour the batter into your pan and bake until a toothpick inserted in the center comes out clean (about 25–30 minutes for a mini loaf, or 18–20 minutes for muffins).

  6. Let it cool in the pan for a few minutes, then turn it out onto a rack.
